Avocado Mojo Bowls with Sweet Potato and Chicken are a flavorful and nutritious meal that combines seasoned sweet potato wedges, tender chicken, and a vibrant avocado mojo sauce.

Ingredients

For the Avocado Mojo Sauce:

  • 1/3 cup avocado oil
  • Half an avocado
  • 1/4 cup orange juice
  • 1 tablespoon white vinegar
  • 1 clove garlic
  • 1/4 cup packed cilantro (leaves and stems)
  • 1/2 teaspoon coarse kosher salt
  • Optional: 1/4 cup mayonnaise for added creaminess

For the Bowls:

  • 2 sweet potatoes
  • 1 red onion
  • 2 tablespoons avocado oil
  • 2 tablespoons taco seasoning (plus a pinch of smoked paprika, if desired)
  • 200g Chicken meatballs or Rotisserie chicken

Preparation

    Roast the Vegetables Preheat oven to 218°C (425°F). Toss sweet potatoes and onions with oil and seasoning. Spread on a baking sheet and roast for 25-30 minutes, until tender and caramelized.

    Make the Avocado Mojo Sauce Blend all sauce ingredients until smooth and creamy. Adjust seasoning to taste.

    Prepare the Chicken Warm shredded chicken in a pan or microwave.

    Assemble the Bowls Divide roasted sweet potatoes, onions, and chicken into bowls. Drizzle with avocado mojo sauce and garnish with extra cilantro.
