Avocado Mojo Bowls with Sweet Potato and Chicken are a flavorful and nutritious meal that combines seasoned sweet potato wedges, tender chicken, and a vibrant avocado mojo sauce.
Ingredients
For the Avocado Mojo Sauce:
- 1/3 cup avocado oil
- Half an avocado
- 1/4 cup orange juice
- 1 tablespoon white vinegar
- 1 clove garlic
- 1/4 cup packed cilantro (leaves and stems)
- 1/2 teaspoon coarse kosher salt
- Optional: 1/4 cup mayonnaise for added creaminess
For the Bowls:
- 2 sweet potatoes
- 1 red onion
- 2 tablespoons avocado oil
- 2 tablespoons taco seasoning (plus a pinch of smoked paprika, if desired)
- 200g Chicken meatballs or Rotisserie chicken

Roast the Vegetables Preheat oven to 218°C (425°F). Toss sweet potatoes and onions with oil and seasoning. Spread on a baking sheet and roast for 25-30 minutes, until tender and caramelized.

Make the Avocado Mojo Sauce Blend all sauce ingredients until smooth and creamy. Adjust seasoning to taste.

Prepare the Chicken Warm shredded chicken in a pan or microwave.
